Southern Sautéed Okra

Tender and flavorful okra recipe with onions, tomatoes, and garlic. The perfect southern-style veggie side dish!

Ingredients

  • 1/2 pound fresh Okra
  • 2 Plum or Roma Tomatoes
  • 1 small-medium White Onion
  • 1 clove Garlic minced
  • 3 tbsp Olive Oil divided

Instructions

  1. Slice the okra into 1/4 inch thick rounds. Place them in the sauté pan with 2.5 tablespoons of the olive oil.

  2. Sauté at medium-high heat for 10-15 minutes until tender and losing some of the slimy quality.

  3. Meanwhile chop the onion into bite sized pieces and mince the garlic clove. Add to the okra and cook for about 10 more minutes.

  4. Chop the tomatoes into bite sized pieces. Add in to the sauté pan. Cover. Cook for 10 minutes. Uncover and cook for 5 extra minutes.

  5. Serve!
