Ingredients

  • 10-12 Medium or Large Shrimp (optional)
  • 1-2 Eggs (optional)
  • 1 bag Frozen Un-shelled Edamame Beans
  • 1/2 cup Cherry Tomatoes sliced in half
  • 1 Avocado sliced in 1/4 inch cubes
  • 1 tbsp Lime or Lemon Juice

  • A pinch of Salt

Instructions

  1. (Optional) Sautée your shrimp or hard boil your eggs and set aside to cool.

  2. Cook the frozen edamame beans according to the directions on the package. (I find it usually takes around 5-7 minutes in boiling water.)

  3. Slice your cherry tomatoes in half.

  4. Slice one avocado into 1/4 inch cubes.

  5. Combine all together in a bowl. Add in your shrimp or chop up your eggs on top.

  6. For Shrimp: Add lime juice, paprika, and salt over the top. Toss to coat.

For Eggs: Add lemon juice, cardamom, and salt over the top. Toss to coat.

    Serve immediately.
