Classic Tex-Mex Migas

A classic Tex-Mex breakfast dish that’s easier than it looks! Creamy scrambled eggs mixed with fresh veggies and crispy fried tortillas then covered in melted cheese. An explosion of flavor and texture!

Ingredients

  • 4-5 strips Bacon cooked and cut into tiny pieces
  • 4 Corn Tortillas
  • 4 tbsp Olive Oil
  • 6 Eggs
  • 1/2 Green Bell Pepper diced
  • 1/2 Red Bell Pepper diced
  • 1/2 Red Onion diced
  • 1 clove Garlic minced
  • 1/2 cup Cherry Tomatoes quartered
  • 1/4 cup Pepper Jack Cheese grated
  • 1/4 cup Cheddar Cheese grated
  • 2 tbsp fresh Cilantro minced
  • 1 Avocado sliced
  • Pickled Jalapeños optional

Instructions

  1. Heat 3 tbsp olive oil in a pan until shimmering and no longer smoking. Place 1 tortilla in the oil and fry until crispy on both sides. Repeat with the three remaining tortillas. Set on a paper towel to cool and drain.

  2. Dice your onion and bell peppers. Mince the garlic and slice the tomatoes.

  3. Pour out your used heated oil and add the remaining 1 tbsp fresh olive oil in the pan. Heat over medium heat.

  4. Add your garlic and onion and cook until fragrant (~ 2 min). Then add your bell peppers and cook 5 minutes. Add in your tomatoes and cook for 2 more minutes.

  5. In a separate bowl, whisk your eggs together. Pour into the pan over your veggies and scramble the eggs and veggies together using a spatula. Sprinkle with salt and pepper to taste.

  6. Crush your four fried tortillas into pieces and sprinkle into your eggs. Add in bacon pieces, cheddar and pepper jack cheese, stir one last time to mix.

  7. Serve topped with jalapeños, fresh cilantro, and avocado. Add refried beans on the side!
