You can get migas in nearly every diner everywhere. But they all do it wrong. To get real migas, full of flavor and texture, you need to go to a diner in the South. They cook in actual lard down there. And you can taste the difference.

You can also feel the difference in your arteries. But we’ll leave that there for now.

Migas are a traditional breakfast dish in Mexico, a mix of fried tortillas and eggs. These are “Tex-Mex” migas since they include some flavors you won’t find in the traditional Mexican meal.

TL;DR:

  • Cook bacon until crispy then break into small pieces
  • Place tortilla in hot bacon fat and fry on each side until crispy, repeat for all remaining
  • Once all tortillas have cooled, divide into triangular sections
  • Dice peppers, tomatoes, garlic, onion
  • Cook the onions and garlic in a small skillet for 2 minutes. Add in the peppers and cook.
  • Scramble eggs in a bowl, then add to a large skillet
  • Add in tortilla pieces, bacon bits, and spices, cooking everything together
  • Add cheese and stir everything together
  • Serve with guacamole, if desired

How to make Migas

Migas are essentially Mexican scrambled eggs. All you’re doing is throwing eggs, veggies, and spices into a pan and scrambling away. The big difference from a basic “egg melange” are the tortillas!

Tortillas. Always use corn tortillas. The flavor is so important and the texture of a fried corn tortilla is essential. Fried flour tortillas are bland. And they taste sort of like hard tac… If you can’t find corn tortillas to fry or you don’t want the trouble, use plain tortilla chips.

Eggs. Duh. You can’t make migas without them. That’s the whole point. Six eggs is my go-to to feed 4 people. Use more if you have a larger party.

Veggies. There are two components in the veggie area: flavor and color. You want bright vibrant colors. Fortunately brightly colored veggies usually coincide with flavorful veggies too! 

Onions add a delicious flavor in so many Mexican dishes. And the purple color of red onions is a standard Mexican-style addition.

Bell peppers add a classic Mexican touch and a bit of sweetness. 

Acidic tomatoes are also essential. And they pair perfectly with eggs!

Bacon. I like to add bacon to my migas. It makes frying the tortillas so much easier. But it also adds a very rich flavor. If you’d rather avoid bacon, you can leave it out. Or try chorizo instead!

Cheese. You have a couple options here. You can add cheddar and pepper jack like me. Or try queso fresco for a more authentic Mexican flavor!

Toppings. Migas are sort of like nachos in that toppings can make or break the meal. (And also the fact that corn tortillas are involved.) I always add avocado slices, cheese, and fresh cilantro on mine.

But you can also add jalapeños, queso fresco, fresh diced red onion, salsa, or pico de gallo.

Other Variations on Migas

Try adding other veggies like mushrooms, corn, black beans.

You could also add some seasonings for a spicier meal. Try cumin, coriander, paprika, or cayenne.

What to serve with Migas?

I always serve migas with a side of warm refried beans. You could also add some Spanish rice and warmed tortillas on the side. And, of course, guacamole is always an option!

But you can also add some homemade turkey sausages to the side if you want an even more decadent breakfast meal.And if you’re in more of a brunch mood, why not have a Spicy Santa-Fe Style Taco Salad on the side.

Ingredients
  • 4-5 strips Bacon cooked and cut into tiny pieces
  • 4 Corn Tortillas
  • 4 tbsp Olive Oil
  • 6 Eggs
  • 1/2 Green Bell Pepper diced
  • 1/2 Red Bell Pepper diced
  • 1/2 Red Onion diced
  • 1 clove Garlic minced
  • 1/2 cup Cherry Tomatoes quartered
  • 1/4 cup Pepper Jack Cheese grated
  • 1/4 cup Cheddar Cheese grated
  • 2 tbsp fresh Cilantro minced
  • 1 Avocado sliced
  • Pickled Jalapeños optional
Instructions
  1. Heat 3 tbsp olive oil in a pan until shimmering and no longer smoking. Place 1 tortilla in the oil and fry until crispy on both sides. Repeat with the three remaining tortillas. Set on a paper towel to cool and drain.

  2. Dice your onion and bell peppers. Mince the garlic and slice the tomatoes.

  3. Pour out your used heated oil and add the remaining 1 tbsp fresh olive oil in the pan. Heat over medium heat.

  4. Add your garlic and onion and cook until fragrant (~ 2 min). Then add your bell peppers and cook 5 minutes. Add in your tomatoes and cook for 2 more minutes.

  5. In a separate bowl, whisk your eggs together. Pour into the pan over your veggies and scramble the eggs and veggies together using a spatula. Sprinkle with salt and pepper to taste.

  6. Crush your four fried tortillas into pieces and sprinkle into your eggs. Add in bacon pieces, cheddar and pepper jack cheese, stir one last time to mix.

  7. Serve topped with jalapeños, fresh cilantro, and avocado. Add refried beans on the side!
